On Sep. 2, 2020, China Hotel Association and Xinhuanet jointly released the "2020 Annual Report of China's Catering Industry" in Beijing. The report showed that although the catering industry was severely hit by the epidemic in 2020, it would maintain the trend of steady improvement.
At present, China's catering industry has a low industrial concentration, and generally, the industry has problems such as products of low added value, low customer retention, and short life cycle. The report pointed out that 60% of catering companies had recognized the importance of brands and regarded brand development as an important development strategy for companies. The brand-building would become an important way for the high-quality development of the catering industry.
According to the "Human Resources Status Report of the Hotel and Catering Industry in 2020" released by the China Hotel Association in June 2020, catering companies generally reflect that there is still a certain gap between the actual operational capabilities of college graduates and the real job needs. Therefore, adjusting the industry’s talent structure and developing high-quality skilled talents that adapt to the development of the industry will be an important driving force for the innovation and development of the industry. The training courses include two major categories, (1) training of cooking skills covering Gingko signature dishes, Gingko characteristic Sichuan cuisine, crash training on Shanghai cuisine of Sichuan cooking style, intensive training on Shanghai cuisine, crash training on select Sichuan cuisine, skills of preparing cubilose, abalone, shark’s fin and sea cucumber, classic Cantonese cuisine, crash training on Sichuan style seafood cooking, customized dish training, etc., and (2) training on catering operation & management consisting of publicity and marketing, customer maintenance and management, human resource management, cost operation, raw material accounting, restaurant etiquette, restaurant front office management, Chinese kitchen operation and management, and customized training. A series of courses in western cuisine and hospitality management will be launched in the future.
